IFBA Mexican Supper Club: Saturday 21 May

Do you know how to put a taco together? Fancy learning how to make your own corn tortillas? Lily Ramirez-Foran, our very own Amateur Mexican Cook in Ireland, has kindly offered to host a once-off Mexican Supper Club for IFBA members. This will take place in her kitchen in Walkinstown, Dublin 12, from 3pm on Saturday 21 May.
During the afternoon, Lily will show us how to make basic corn tortillas plus three taco fillings. After we’ve all had a chance to making our own, we can sit down together to enjoy a taquiza (a taco fest) and, perhaps, a few margaritas. She is hoping that the weather will be warm enough by then to give a true Mexican Feel to the evening with frozen strawberry margaritas outdoors (she had Kristin at the frozen strawberry margaritas!)
Almacen Latino (www.almacenlatino.com) will sponsor the maize flour for the tortillas as there is no Irish equivalent, and have also offered three tortilla presses and a voucher for their website to raffle on the night.

Botana:
Traditional Mexican food has no starters, we do something called “botana” (light snack) usually consisting of freshly made salsas and totopos (tortilla chips)
Main:
Barbacoa -traditional Beef dish from the north of Mexico stewed in tequila and bay leaf overnight.
Rajas con Queso y Elote – a vegetarian dish with sweet peppers, corn and cheese
Cochinita Pibil with red onion pickle – Pork meat based dish traditionally served in the south of Mexico
Papas con chorizo – potato & chorizo based dish
Salsa roja – Red salsa
Salsa verde – green tomatillo sauce
Corn tortillas
Salad to garnish tacos
Desserts:
Traditional Mexican Flan
Mango cold Pie
Drinks:
Hibiscus cold tea - non alcoholic
Frozen Margaritas – definitely alcoholic

Oh, so sad to have to miss this, but we have a 40th to attend that day. Otherwise we would be all over this one! What a wonderful treat. I’ll console myself knowing I’ll be in Texas for 10 days in May eating as much Mexican food (and BBQ) and the law will allow.
