Group of 16 looking for a chef at Lisheen Castle

A group of 16 Canadians is renting Lisheen Castle near Thurles for a week from September 25 to October 2 and they’re looking for a chef for the week who will focus on wine, Irish food and culture and FUN.
Instead of bringing a chef (which they did in 2011), they would like to hire locally and celebrate Irish produce and cooking. They’re looking for one chef to cook dinners 6 or 7 days that week. Dinner typically is served at 8 with an appetizer, main course and dessert.
If possible, they’d also like to have a chef/baker give two one-hour cooking demos or classes for a group of 6 or 7. (Could be the same day or not. Last year the group made Irish brown bread and scones, but it could be a short class on anything, or be incorporated into help make something for the evening meal.)
The accommodation is just outside of Thurles, so possibly a chef would be needed from 5 to 10 pm. The kitchen has a gas and electric cooker and is a good size and fairly well equipped. The group would pay salary for the week and accommodation.
